Blueberry Yogurt Muffin Topped With Streusel

This recipe is very very special to me. Unlike many other recipes, this one is the winner. Although i don't bake much but this is the muffin that i have been wanting. The muffin texture is moist and on top of that the streusel (crumbs) has added some buttery flavour and crunchy bites which makes me fall in love immediately. Well, im munching the muffin while typing this. Gosh!

Recipe: Blueberry Yogurt Muffin Topped With Streusel

The muffin mix:

1/2 stick of pure butter at room temperature(do not substitute as the butter will distinguish your muffin with other's)
1 cup of plain flour + 2 tsp of baking powder or 1 cup of self rising flour
1 cup of yogurt (any flavour but i choose berries flavour)
3/4 cup of caster sugar
2 tsp of vanilla essence
1 cup of blueberries
2 nos of eggs
1 pinch of salt

The streusel topping:
1/4 stick of pure butter at room temperature
1/4 cup of caster sugar
1/3 cup of plain flour

  1. First of all, preheat your oven to 200° Celsius with bottom heat. For your information, im using a 20 litres oven thus for bigger oven, you just preheat the oven as how you want.
  2. Then prepare the streusel by melting your butter in microwave. take it out, while it is hot, combine with sugar and gradually scoop in the flour spoon by spoon. With a fork, mix them until they turns into crumbs. Put aside.
  3. For the muffin mixture, combine caster sugar, butter and vannila essence then mix until the batter becomes fluffy. Add in eggs one by one, yogurt, and salt. Lastly, scoop in the flour spoon by spoon.
  4. Grease you muffin tray, scoop in the muffin 2/3 from the tray, put in berries generously, cover with one spoon of muffin mix. Then cover with the streusel topping generously.
  5. The tips to bake this muffin. for the first 15 minutes, use bottom heat only at 200° celcius. This is to ensure the muffin mixture will absorb in the streusel topping around 80%. You may see only 20% of the streusel on the muffin. That is what we want.
  6. Then change to upper heat only at 180-200° celcius. Bake brownies until it turn golden; maybe around 10-15 minutes.
